Our Mexican Chiapas coffee comes from small farms located throughout the highlands of Chiapas, Mexico. The region's rich volcanic soil and cool mountain climate create perfect growing conditions for producing smooth, flavorful beans.
Grown under native shade trees, this coffee benefits from natural protection against harsh sunlight, supporting biodiversity and promoting healthier plants. Shade-growing encourages slower bean development, leading to richer, more balanced flavor in every cup.
After harvest, the coffee cherries are carefully processed using the honey method, where part of the fruit's natural sugars remain on the beans during drying. This process enhances sweetness and contributes to a smooth, mellow flavor without bitterness.
