Where Our Honduran Dark Roast Comes From
Same beans as our medium roast Honduran — same origin, bolder roast.
High-Altitude Beans from Marcala, La Paz
This dark roast starts in the same place as our bestselling Organic Honduran — the high-altitude farms of Marcala, La Paz, Honduras. Grown between 1,300 and 1,700 meters above sea level in mineral-rich clay soil, these beans develop slowly under natural tree canopy for the complexity and density a dark roast needs.
Semi-Washed and Sun-Dried for Smooth Depth
After hand-harvest between November and February, the cherries are semi-washed and sun-dried on raised beds. This processing keeps just enough of the fruit's natural sugars in contact with the bean to add body and concentrated sweetness — perfect for drawing out cabernet, raisin, and cacao notes during a dark roast.
Three Heirloom Varietals — Bourbon, Catuai, Caturra
The trees in Marcala produce a blend of three heirloom Arabica varietals — Bourbon, Catuai, and Caturra. Each contributes something different: Bourbon brings sweetness and body, Catuai adds clean acidity, and Caturra rounds out the cup with smooth balance. Together they give our Honduran the depth and dimension a darker roast needs to shine.
Air-Roasted Dark in Small Batches
Once the green coffee arrives in Bensenville, Illinois, we roast it on our fluid-bed air roaster. Air roasting suspends the beans in hot air rather than tumbling them against hot metal, which means no scorching, no burnt taste — even at a dark roast level. We run small batches of the dark roast just a few times a year, when the green coffee timing is right.
